At the table

A home-kitchen version.

Soft eggplant and tomato form this Moroccan-inspired cooked salad, seasoned with cumin, paprika and garlic. Lemon and coriander add a brighter finish.

This is a home adaptation rather than a claim to represent every regional version. Give the vegetables enough time to soften and the tomato mixture enough time to lose excess water.

Method

  1. Roast the aubergines. Heat the oven to 220 C. Halve the aubergines lengthways and brush their cut faces with 1 tablespoon oil. Lay cut-side down on a lined tray. Roast for 30-40 minutes until the skin wrinkles and the flesh yields easily to a spoon.

  2. Prepare the tomato base. During the final roasting minutes, warm the remaining 2 tablespoons oil in a wide pan. Add minced garlic and stir for 30 seconds, without browning it. Add tomatoes, cumin, paprika and salt. Bring to a lively simmer, stirring to avoid catching.

  3. Reduce the sauce. Cook the tomato mixture uncovered for 12-15 minutes until visibly thicker. As water evaporates, scrape the pan frequently. This stage overlaps the aubergine roasting, so it is not an additional full roasting period. Remove the pan from the heat briefly if necessary.

  4. Combine the flesh. Scoop roasted aubergine flesh away from the skins and chop it coarsely. Add to the tomatoes. Mash lightly so some texture remains, then cook together for 8-10 minutes, stirring. The finished salad should mound softly rather than leak a pool of thin liquid.

  5. Season and cool. Stir in all the measured chopped coriander and lemon juice. Taste the balance without adding unspecified ingredients. Let cool for 15 minutes if serving warm rather than piping hot. For a cold salad, transfer promptly to a shallow container and refrigerate after brief cooling.

  6. Present simply. Divide among six small plates or place in one shallow sharing bowl. The measured recipe contains no bread, cheese or yoghurt garnish. Keep chilled leftovers covered and use within three days. Serve cold or reheat a portion thoroughly; do not repeatedly warm the whole batch.

Small details, better results

Before you cook

  • Cook the eggplant until tender before judging the final texture.
  • Watch the tomato mixture as it reduces so it thickens without catching on the pan base.
