Easy Thai Recipes for Beginners

Start small: one skillet dish and one aromatic soup. These two home-kitchen recipes introduce egg frying, a fragrant broth and the salty-sour balance of fish sauce and lime. Follow their measured ingredients and doneness checks before trying extra variations.

A good place to begin

Before you choose

Shop before choosing your cooking day

The omelette needs fish sauce; the soup also needs lemongrass, galangal, makrut lime leaves and unsalted fish stock. Check availability first. There is no promised like-for-like substitute for every aromatic.

Prepare first, then heat

Measure the liquids, cut the vegetables and set out equipment before cooking. Keep raw shrimp chilled and use separate equipment for ready-to-eat ingredients.

Try one dish at a time

The yields and timings of these two recipes are independent. Rice is not included in either ingredient list. For a first attempt, cook one recipe rather than timing both at once.

Thai Omelette (Kai Jiao)

Start here for a short ingredient list. Well-beaten eggs become two small omelettes with golden edges, shared as four side portions.

Kitchen tip: Set out your plate and spatula before heating the oil. Use the specified 20 cm skillet, pour close to the pan and cook the centre through. This is shallow frying, not a deep-fryer recipe.

Tom Yum Goong Shrimp Soup

Move on to a broth built from lemongrass, galangal and makrut lime leaves. This method strains the tough aromatics out before adding vegetables and shrimp.

Kitchen tip: Fish stock and fish sauce are separate ingredients. Reserve the lime juice for the finish and check shrimp for doneness rather than relying on pink colour alone.

The cookbooks behind the dishes

Cookbooks are paid digital downloads, not physical books. Etsy purchases and DishRoam app access are separate.

Good to know

Which recipe should I try first?

The omelette has the shorter shopping list. It still requires care with hot oil and fully cooked egg. Choose the soup when you have the listed aromatics and a thermometer available.

Are these Thai recipes vegetarian?

No. Both use fish sauce, and the soup also uses shrimp and fish stock. Our vegetarian collection contains different recipes; removing fish sauce alone does not turn this soup into the same dish.
